Beef Ramen Soup

I went to the grocery store with beef stir fry in mind, got to the Asian aisle, saw REAL Ramen noodles, and everything changed...
You guys, I made this up, and it was so good and so full of flavor! 

Ingredients

For the broth:
1tbsp sesame seed oil
1tsbp olive oil
1/2c onions, julienned 
3 garlic cloves, minced
1/2tsbp fresh ginger, minced
pinch of salt
1/4c low sodium soy sauce
2c beef broth
2c water
2/3 package Ramen noodles

For the beef:
1tsbp sesame seed oil
1tbsp olive oil
1lb thin sirloin steak, sliced (any sort of thin stir fry beef should do)
salt & pepper
1c Hoisin sauce (I used homemade b/c I forgot Hoisin sauce)

For homemade Hoisin sauce:
4tbsp soy sauce
2tbsp peanut butter
1tbsp honey
2tsp white wine vinegar
1/8tsp garlic powder
2tsp sesame oil
1tsbp Sriracha
1/8tsp black pepper

For the vegetables:
1tbsp fresh ginger, minced
3 garlic cloves, minced
1c baby bella mushrooms, chopped
1c baby bok choy leaves, cut into large pieces
1/2c bok choy stems, julienned into thin pieces
salt & pepper, to taste

For the garnish:
1/2c green onions, diced
1/4c fresh cilantro, chopped



Directions

1. If making homemade Hoisin sauce, make first. Combine all ingredients into a bowl, and stir until combined. Set aside.

2. Make broth. Heat oils in medium to large pot over medium heat. Saute onions, ginger & garlic until onions are translucent. Add soy sauce & stir until soy sauce starts to evaporate & become thick. Add salt to taste. Add broth & water. Stir and simmer over medium heat.

3. In a large skillet, heat oils over medium high heat. Add beef, salt & pepper. Stir fry beef until desired doneness (I like my beef mid-rare, so I stir fried the beef for about 1-2 minutes). When done, transfer beef into hoisin sauce mixture. Cover to keep warm.

4. Bring broth to a boil. Add ramen noodles. Cook for 4 minutes.

5. In the same skillet as the beef, add mushrooms, ginger & garlic. Saute for 3 minutes. Push to a corner of the sauté pan. Add bok choy leaves. Saute until it begins to wilt. Push to another corner of the sauté pan. Add bok choy stems. Saute 1 min, push aside. Season with salt & pepper. 

6. Assemble your plate. Ladle out 1-2c of broth into a bowl. Swirl some noodles onto a fork & transfer to bowl. Add part of the mushrooms to one side of the bowl. Add bok choy leaves to bowl. Add bok choy stems to bowl. Add green onions to bowl. Add slices of beef to bowl. Sprinkle with cilantro.
