Selfie Cam

How often do you take selfies? Me, once every 3 weeks or so... And I usually make a stupid face when I take a selfie because I feel so awkward taking one. Let's be honest, selfies aren't usually taken to capture a serious / precious moment anyway...

Last night, my coworkers and I were heading out to attend Wilmington's Fall Fashion Preview. It features all of the best boutiques around town, so we just had to be there! Before we got to the event, we wanted to be sure to get a picture of ourselves... Cue selfies number 1, 3, and 12. 





"There has to be an app with a timer that will take a picture of us..."
Indeed, there is!!

Pinterest Dump

Good morning, Everyone!
There's no usual "scenes from the weekend" post today because we did NOTHING over the weekend... And I loved every bit of it. Seriously. Every invite we got to do something, we turned down. So instead, I'm dumping some of my favorite Pinterest things from the moment onto you. 

This tablescape is everything! With some tweaks here and there, this could easily become my Thanksgiving or Christmas table. 

I love hamburger helper, but I don't make boxed anything! I like to control what ingredients go into my meals, so I often make this copy cat. Tastes like the real thing. So good!

This beef stew looks delish. I plan on making it tomorrow night. 

I'm loving this look. It would even be cute with tights and booties. Anyone know where I can find this dress?? The link led to a dead end.

What I'm really crushing on this fall are camel colors. I'd rock both these looks. 

I'm a firm believer in this. I used to be quite the talker in my younger years. As I got older, I met so many people that talked more than me and never listened to a thing I had to say. It has become such a pet peeve of mine when someone can't just be quiet and listen that I try my damnedest to talk a lot less these days...

Beef Ramen Soup

I went to the grocery store with beef stir fry in mind, got to the Asian aisle, saw REAL Ramen noodles, and everything changed...
You guys, I made this up, and it was so good and so full of flavor! 

Ingredients

For the broth:
1tbsp sesame seed oil
1tsbp olive oil
1/2c onions, julienned 
3 garlic cloves, minced
1/2tsbp fresh ginger, minced
pinch of salt
1/4c low sodium soy sauce
2c beef broth
2c water
2/3 package Ramen noodles

For the beef:
1tsbp sesame seed oil
1tbsp olive oil
1lb thin sirloin steak, sliced (any sort of thin stir fry beef should do)
salt & pepper
1c Hoisin sauce (I used homemade b/c I forgot Hoisin sauce)

For homemade Hoisin sauce:
4tbsp soy sauce
2tbsp peanut butter
1tbsp honey
2tsp white wine vinegar
1/8tsp garlic powder
2tsp sesame oil
1tsbp Sriracha
1/8tsp black pepper

For the vegetables:
1tbsp fresh ginger, minced
3 garlic cloves, minced
1c baby bella mushrooms, chopped
1c baby bok choy leaves, cut into large pieces
1/2c bok choy stems, julienned into thin pieces
salt & pepper, to taste

For the garnish:
1/2c green onions, diced
1/4c fresh cilantro, chopped



Directions

1. If making homemade Hoisin sauce, make first. Combine all ingredients into a bowl, and stir until combined. Set aside.

2. Make broth. Heat oils in medium to large pot over medium heat. Saute onions, ginger & garlic until onions are translucent. Add soy sauce & stir until soy sauce starts to evaporate & become thick. Add salt to taste. Add broth & water. Stir and simmer over medium heat.

3. In a large skillet, heat oils over medium high heat. Add beef, salt & pepper. Stir fry beef until desired doneness (I like my beef mid-rare, so I stir fried the beef for about 1-2 minutes). When done, transfer beef into hoisin sauce mixture. Cover to keep warm.

4. Bring broth to a boil. Add ramen noodles. Cook for 4 minutes.

5. In the same skillet as the beef, add mushrooms, ginger & garlic. Saute for 3 minutes. Push to a corner of the sauté pan. Add bok choy leaves. Saute until it begins to wilt. Push to another corner of the sauté pan. Add bok choy stems. Saute 1 min, push aside. Season with salt & pepper. 

6. Assemble your plate. Ladle out 1-2c of broth into a bowl. Swirl some noodles onto a fork & transfer to bowl. Add part of the mushrooms to one side of the bowl. Add bok choy leaves to bowl. Add bok choy stems to bowl. Add green onions to bowl. Add slices of beef to bowl. Sprinkle with cilantro.

Scenes From The Weekend

Happy Monday, everyone! 
I woke up to Fall! 45 degrees? Yes, please! 

Anyways, I had a great weekend... 
Friday night, Brad and I went to a wine tasting with our biffs, followed by a lovely dinner at another wine bar, followed by our favorite dive bar for a little darts. I stayed out way past my bedtime, suffered a little bit Saturday, laid around long enough to watch my football game and complete my new favorite DIY project, then did it all over again Saturday night. My awesome neighborhood hosts Oktoberfest at a neighbors' every year. Six of our friends came with, and we made it yet another all night thing. Needless to say, Sunday was definitely a day of rest.

Friday night, I fell off my low carb band wagon. Whoops!

I made these this week, and they were the bomb. I added a chipotle mayo sauce to put on top once they were done cooking. The perfect low carb meal! (I started a low carb diet on Monday, and I've lost 2.5 pounds as of this morning. As Subway agrees, I need to look good in my Halloween costume!)

What I'm Wearing

I had a couple of people ask me about various things that I was wearing over the weekend, so I figured I'd share! 

I'm loving my new Tom Ford sunnies. And the kicker here is that they're men's... I just love the tortoise wayfarer style. 



I've been wearing my Gorjana initial ring everyday. I love it. It's turned over the past few months that I've had it, so word to the wise, don't wash your hands with it on.



I just bought this Janessa Leone hat. I love it! 
My big head needs to stretch it out, but it sure is purdy.
I wear this Gorjana necklace almost daily, as well. She has the best jewelry!

Of course you've seen this Clare V. leopard foldover clutch everywhere... It's the best! It goes with absolutely errrrr-thing!!!
